    Maintaining a clean and sanitized working environment is crucial when it comes to owning and operating a commercial food service business. However, there is a lot more to sweeping and mopping at the end of the night. We pulled together a list of cleaning procedures that should not be missed.


    Daily Cleaning Tasks

    A lot can happen in a day within a commercial kitchen, spills, stains, etc. Here are a few daily cleaning tasks to follow to maintain a safe and sanitary environment.

    • Wipe down the walls where cleaning is needed.

    • Wipe down all kitchen equipment. This is important to prevent grime and build up, and also prepares you for a clean and fresh start for the next day.

    • Make sure when cleaning your cooking equipment to change the foil lining as well.

    • Clean all beverage dispensers and soda fountains and guns, this will keep fruit flies away!

    • Wash all utensils, smallwares, flatware and glasses and clean out the sinks once done.

    • If needed, refill soap and paper towel dispensers.

    • Last but not least, sweep and mop the kitchen floors and take out the trash.


    Weekly Cleaning Tasks

    Although it is extremely important to clean your commercial kitchen daily, there are a few tasks that are important to follow up on weekly and monthly, let’s take a look.

    • Clean out the ovens, doors, racks, and surrounding walls.

    • Boil out the deep fryer.

    • Wash and sanitize walk-in freezers and refrigerators.

    • Delime all sinks and faucets.

    • Clean all anti-fatigue mats and use drain cleaner on the floor drains.

    Monthly Cleaning Tasks


    • Wash behind the hot line to prevent any clogs.

    • Empty out grease traps to prevent clogs in the lines and wash vent hoods.

    • Clean and sanitize the ice machine, along with the refrigerator and coils.

    • Run sanitizing chemicals through coffee makers to remove any grime that may have built up.

    • Lastly, wash the walls and ceilings around the hot equipment to remove any grease that has built up.
