Jails and Prisons need to be able to feed thousands of inmates at a time, in order to do so it is important to have all of the necessary equipment on hand within your correctional kitchen. Today we are going to go over common equipment that can be found within the correctional kitchen setting.
• Commercial kettles: Allow facilities to produce large batches of slow cooked foods, typically soups and stews. This is extremely important in the correctional setting when your responsibility is to feed up to 2,000 inmates or more a day.
• High-speed ovens & Commercial Microwaves: Both are great options when it comes to rethermalizing foods quickly and efficiently.
• Convection ovens: Allow facilities to slow cook large batches of foods and are best used for roasting and baking.
• Blast Chillers: Are designed to quickly bring food down to safe storage temperatures and are typically used for the cook and chill method, which is when foods are prepared ahead of time. This is extremely important when it comes to serving meals in prisons. This eliminates the amount of time needed to prepare for the next day.
• Walk-in refrigerators and walk-in freezers: Provide a large cold storage space for chilled and frozen foods.
• Commercial mixers: Are a must have when it comes to preparing large quantities of food at a time. You can also purchase additional attachments for your commercial mixer that will expand the mixers capabilities.
• Commercial dishwashers: Make the process of washing thousands of trays and flatware much more efficient. Typically you will find a conveyor style dishwasher within a large institution.
