Once you season it, clean-up with this pan is a breeze. The weight on it is good. Not as heavy as many other similar pans but it is very sturdy and I expect to be cooking with this for years. Especially love searing a good steak in this.

Simply put this is the best pan I have ever used. You really need to follow the seasoning instructions but it is fairly simple even if you have never done it.

While I've only begun to put it through its paces, I've been very impressed by this pan. Once you get it seasoned, it really does function as a non-stick pan, even more so than cast iron (which I also use frequently}, without at least some of the weight. It's easy to clean, and unlike a Teflon type pan, it produces a nice sear on the food. I was surprised at how well omelets came out in the pan. About the only knock is that, like cast iron, it's not particularly well suited to cooking highly acidic foods, like, say, tomato sauce.

I've purchased the Matfer Bourgeat carbon steel pans in multiple sizes (11 3/4", 10 1/4", & 9 1/2"). Once the pans are seasoned according to the Matfer Bourgeat instructions, they are virtually non-stick. The pans are also easy to clean and not as heavy as a cast iron pan. I can't say enough about these pans. They easily go from stove top to oven and retain heat very well. The pan may be slightly more expensive than a non-stick pan, but these pans have no potential health issues like non-stick coated pans and should last a lifetime if cared for properly. I highly recommend the Matfer Bourgeat carbon steel pans.
